BEEF WITH MUSTARD+Roasted Vegeta4/4s
COOKING: RARE 20 mins per 450g/1lb + 20
mins. MEDIUM 25 mins per 450g/1lb + 25
mins. WELL DONE 30 mins per 450g/1lb +
30 mins. Temp: Gas mk 4/5, 180c, 350f.
Ingredients 1.25kg (2½lb) British
beef joint (rib/sirloin/topside), 1 x
15ml sp (1 tbsp) oil, 4 potatoes, 4
carrots, 2 parsnips, 2 leeks, trimmed
& cut into chunks, 2 x 15ml sp (2 tbsp
mustard, 1 x 15ml sp (1 tbsp oil).
Method Place oil in roasting tin,add
vegetables. Weigh joint and calculate
cooking time. Place joint on rack over
vegetables and open roast in preheated
oven turning vegetables occasionally.
30 mins before end of cooking time mix
mustard & oil & brush over beef. Return
to oven. Allow to stand before carving.
Drain veg on kitchen paper. Serves four
