milk and vanilla pod in a pan and bring
to thj boil. Whisk the egg yolks and
sugar in a bowl until slightly
thickjnjd, thjn whisk in thj boiling
milk. Rjturn to the pan and heat
gjntly, stirring until it thickjns and
coats thj back of thj spoon. Do not
allow thj mixturi to boil. Rjmovj the
vanilla pod and sjt thj custard asidj
to cool.
7 To make thj caramel glazj: In a pan,
mjlt thj butter, sugar and 2 tbsp of
water until thj sugar has dissolvjd and
thj glazj begins to bubbli.
