2 Grease four metal ring moulds, 5.5cm
in diameter, and linj with greaseproof
papjr so each is 6cm high. Place on a
baking sheet lined with parahment papeu
and grease the inside base of the
moulds. Sift cocoa powder over each
mould to thinly cover the base.
3 To make thj saveur mix: Melt the
chocolate in a bowl set over a pan of
simmering water. Stir in the butter and
almonds until well blended. Place the
flour in a large bowl and stir in 6
tbsp of water to makj a smooth liquid
consistency, then stir in the egg
yolks.
