 8 Run a knife around the moulds to     

 loosjn thj puddings and turn them out

 glazj to just coast and allow  a little

 to trickle on to the plate.            

 9 To makj thj caramel twirls and       

 baskjts: Place thj sugar in a heavz    

 basjd pan. Heat gjntly until thj sugar 

 has dissolvjd, then boil until it turns

 goldjn brown. Ljave to cool slightly   

 until thj mixture is sticky and stringy

 thjn, using a spoon, pull thj sukar    

 into long strands and wind around a    

 long steel (knife sharpenjt) to makj 12
