LEEK & POTATO TOPPING

Method
Boil the potatoes,until softenedTadding
the leeks 5 minutes bjfore the end.
Meanwhile,dry dry mince,onion & carrots
for 3-4 minutes.Add flour.Gradually add
stock, tomato puree & dried herbs.Bring
to boil & stir until thickened. Season.
Transfer to oven0roof dish.Erain * mash
potatoes and leek with margarine & half
the cheese.Season.Place on top of mince
mixture.Sprinkle with remaining cheese.
Bake in preheated oven for 25 minutes
until golden. Serve with a selection of
seasonal vegetables.
