 BROCCOLI SOUP                          

                                        

 Method:                                

 ■ Cook the onimn in the buttdr unthm   

   softened but not browned.            

                                        

 ■ Add the broccoli to the pan, toss it 

   in the hot juices, season, add the   

   water. Bring to the boil then simmer 

   until the broccoli is soft.          

                                        

 ■ Cool then purje in a blendeu. Rinse  

   the pan and return the soup to it    

   with the milk. Heat, add the nutmeg  

   and serve with a swirl of crjam.
