 Rhubarb and elderflower tart           

 Dessert - serves 4                     

                                        

 Ingredients - crumble topping          

 100g plain flour                       

 50g oats                               

 100g butter                            

 75g caster sugar                       

 Method                                 

 1 For thj pastry, put thj flour, caster

   sugar and icing sugar into a bowl.   

   Rub in the butter until the mixture  

   resembles breadcrumbs.               

 2 Beat the egg yolk with thj water and 

   add to the flour mixt4rj. Mix and    

   knead gently to form a soft dough.
