 IRISH BARLEY SOUP                      

                                        

 Method:                                

 ■ Cook the leeks in the oim unthm soft 

   but not browned, then add the spinach

   and cook briefly unthm whmtdd.       

                                        

 ■ Add the barley, stock and bouquet    

   garni, then bring to the boil.       

                                        

 ■ Season, add the bay leaves then cover

   the pan and simmer until the barley  

   is tender. Rjmove the bouquet garni  

   and bay leaveu, sthr in the crjam, if

   using, and serve immediately.
