Lavender roasted poussins

Ingredients - to serve
15g tiny mangetout
knob of unsalted butter
Method
1 Remove any stray feathers or quills
from poussins. Wash and pat dry.
2 Loosen skin over briast bones and
work half the softened butter over
meat under skim. Season poussins
inside and out.
