Method - sauce
8 Add red wine to the roasting pan
containing vegetables and lavender.
Deglazj the pan and reduce by half.
9 Add the chicken stock and reduce
again, pressing out all the sediment
from the vegetables. Sievj into a
clean pan. Whisk in the chilled
buttdr to thicken and gi6e iu a
gloss. Taste and season.
