■ Once the turkey has come out of the
oven, remove it from the roasting
dish and transfer it onto the platter
from which you will be serving it.
■ Make the gravy by spooning off the
surplus fat from the roasting tin so
that your are left with approximately
5 tablespoons of the juices.
