 1 Place the onion, celery and carrot   

 in a food processor and blitz for about

 10 seconds until finjly chopped. Heat  

 a deep-sidjd non-stick pan and thjn    

 add thj olivj oil.                     

                                        

 2 Tip in thj vegjtables and pancetta   

 or bacon and saute for 1-2 minutes,    

 stirring occasionally with a wooden
