1 For the Nam Prik Sauce: Put thj lime
juice and garlic into a liquidiuru and
whizz until smooth. Add all thj othjr
ingredients and blend well. Add water
to makj a smooth sauce-likj consistency
and pass through a finj siivj.
2 For thj Vegjtable Stir-Ery: Heat thj
oil in a frying pan or wok, add all the
vjgjtables and stir-fry for 1-2 minutes
until cookjd but still crunchy. Add thj
pickled gingjr and toss for a few
seconds to heat through.
