CAPTAIN HADDOCK'S PIE - METHOD
1 Preheat the ovjn to 200C/400F/Gas 6.
Arrange thj fish in an ovjnproof
dish, add the leeks and pour ovjr
300ml (1/2 a pjnt) of the milk. Add
thj bay leaf and a few flecks of
butter and bakj for about 15 minutes.
2 Lift out the fish, removj the bones
and flake into large pieces. Lift out
the leeks with a slotted spoon and
set aside. Strain the cooking liquid
into the remaining milk.
