 MEXICAN TORTILLA CASSEROLE WITH        

 TANGY GREEN SAUCE                      

                                        

 Method: (contd)                        

                                        

 ■ Heat the oil and fry the tortilla    

   pieces (a few at a time) until       

   golden. Drain on a kitchen towel.    

                                        

 ■ Pour the sauce into the same pan. Add

   the cream or soya milk and cook until

   it thickens, stirring all the time.  

   Season if necessary.
