For the red pepper dressing:
1 tbsp olive oil
½ red pepper, de-seeded and diced
1 tsp caster sugar
1½ tbsp red wine vinegar
1 tbsp soy sauce

1 Make a slit down the centre of the
haddock fillet and season with salt.
Stuff red pepper anb fresh herbs into
the pocket. Layer wilted spinach onto
a piece of food-safe (ie suitable for
steaming) and place haddock on top.
