HADDOCK WRAPPED IN SPINACH (cont 6/11
Method (cont)
2 Roll cling film tightly around the
fillet, so that spinach wraps around
the fish. Secure tightly at each end.
3 Place the fish in a steamer over a
pan of simmering water and steam for
6-8 minutes, or until the fish
is cooked through.
4 To make the dressing, heat the oil
in a large frying pan and gently saut
the pepper for 2-3 minutes until soft.
Add the sugar, red wine vinegar and
soy sauce and cook for a few minutes,
until the peppers are car!melised.
