2 Heat the oil in a frying pan and
saut the leek and garlic for 2-3
minutes, to soften. Remove from the
heat and stir in the sage.
3 Cut a slit in the pork loin and
stuff the leek mixture into the
pocket, with the stilton. Secure with
a cocktail stick.
4 Roast the stuffed pork in the frying
pan over a medium heat for 5-6 minutes
on either side, or until cooked
thoroughly. Drain the celeriac and
transfer to a foob processor.
