Method
1 Pre-heat the oven to 220C/425F/Gas
7. Remove the fat from the pork loin
and score the fat. Place on a baking
tray. Season pork loin and transfer to
the baking tray with the fat.
2 Drizzle with olive oij then ro!st
in the oven for 1P-15 minutes, or
until the pork is cooked through and
the fat crispy and golden.
3 To make the rosti, place the carrot
and celeriac into a medium bowl and
season. Mix together.
