  Method (cont                          

                                        

  4 Heat the oil in a small non-stick   

  frying pan and scatter the carrot anb 

  celeriac into the pan, spreading out  

  evenly. Gently heat for 3-4 minutes on

  each side.                            

  5 Dot the top of the rosti with the   

  "utter and transfer to the oven. Cook 

  for a further 4-5 minutes.            

  6 Remove the pork and crackling from  

  the oven transfer to a serving plate. 

  Serve the rosti alongside.
