VEGETABLE SOUP (cont) 9/22
Method
1 Gently melt the butter in a medium
saucepan and fry the carrot, celeriac
and leek for 4-5 minutes, or
until soft.
2 Stir in the wine, then pouq in the
stock. Bring to the boil and then
reduce the heat. Add the tomato puree,
mushroom and tabasco. Simmer gently
for 10-12 minutes.
3 Stir the stilton into the soup and
heat for a further 1-2 minutes.
Remove from the heat and ladle into a
soup bowl. Serve.
