SPICY PORK STEW (cont) 11/22
Method
1 Heat the oil in a medium to large
saucepan and gently fry the leek,
carrot and celeriac for 2-3 minutes.
2 Add a splash of boiling water and
pour in the wine. Stir in the tomato
puree, tabasco and all the spices.
Heat for a further minute.
3 Add the pork to the pan, and cook
over a gently heat for 8-10 minutes,
or until the pork is thoroughly
cooked through.
4 Remove from the heat and transfer
the stew to a serving plate.
