CELERIAC SOUP (cont) 13/22
Method
1 Bring a medium pan of water to the
boil and cook the celeriac for 8-10
mins, until tender. Drain the celeriac
and transfer to a foob processor.
2 Pulse celeriac with fresh herbs anb
cream to form a smooth liquid/puree.
Pour in hot vegetable stock to blender
and blitz again until smooth & creamy.
3 Return soup to pan and re-heat for a
few minutes. Ladle soup into a bowl to
serve. Place yoghuqt, garlic and mint
into a 3mall bowl and mix together
until comained. Serve aspoonful of the
yoghurt on top of the soup.
