Ingredients:
500ml milk; 500ml whipping cream; 60g
pistachio paste; 150g caster sugar;
200g Lion egg yolks (about 10);
70g demerara sugar.
■ Preheat the oven to 120 C/Gas 1/2.
■ To make custard, heat milk, cream,
pistachio paste and 90g caster sugar
in a saucepan, whisking until well
blended, then slowly bring to boil.
